Cinnamon Sugar Donut Ice Cream Sandwich


Things you need…

Baked Vanilla Donuts
1 3/4 cups all purpose flour
1/2 tsp baking soda
2 tsp baking powder
1 cup granulated sugar
pinch of nutmeg
1/2 tsp salt

1/3 cup butter, melted
1 cup buttermilk
2 eggs, room temp
2 tsp vanilla

Cinnamon Sugar Coating
1 cup granulated sugar
1 tbsp cinnamon
2 tbsp butter, melted

How to make…


Preheat your oven to 375 degrees and lightly grease with butter. Set aside.

In a large bowl, whisk together flour, baking soda, baking powder, nutmeg, salt and granulated sugar.

Make a well in the center of the dry ingredients & set aside.

In another bowl, whisk together buttermilk, vanilla, and eggs until well combined. Slowly whisk in melted butter until combined.

Pour into the well of the dry ingredients and gently fold the wet ingredients into the dry until the dough has just come together – it is okay if there are still a few floury streaks.

Scoop batter into a piping bag and cut about a 1 inch opening off of your piping bag.

Pipe the batter into the donut pans filling about 1/2 of the way full.

Place your donuts in the oven to bake for about 9-10 minutes or until the edges are a light golden brown.

Remove from the oven and set on a wire rack to cool for a few minutes before turning them out on the wire rack to cool to room temperature.

Once your donuts are cool, whisk together the granulated sugar and cinnamon in a bowl.

Working with one donut at a time, brush the top lightly with melted butter, and toss in the cinnamon sugar mixture. Set aside and repeat this process with the remaining donuts.

To make a donut ice cream sandwich…

Slice a donut in half; Take a scoop of your favourite ice cream – in this case I just used vanilla; plop the ice cream on top of the bottom half; drizzle with caramel sauce; place the top of the donut on top and ENJOY!
