For the mayonnaise

Christmas Canapes | For the mayonnaise
To prepare the Christmas canapes with roast pork and cranberry jelly first whisk together the egg yolk and the mustard.
Stir in the oil a drop at a time until a yellow cream is formed. (If too much oil is added at once, the mayonnaise will curdle!)
Season with a pinch of sugar and the lemon juice.

Spread the mayonnaise onto the bread and top with the pork.
Add a spoonful of cranberry sauce and add the cheese.
Serve garnished with fresh herbs and arrange the Christmas canapes on a plate.
